Page 4 of 9 Method Soak the almonds, cashew nuts, til and Khas Khas in hot water for 15 minutes. Once the almonds have softened, mix all these ingredients and grind them to a fine paste. (Paste 1) Mix the grated carrot, grated potato, capsicum, coriander leaves, chickpea powder, rice flour, Besan, Garam masala, cream and salt together in a mixing bowl. Once thoroughly mixed, shape them into small balls. Please do not add water. Take a non-stick tawa, grease it lightly with oil, flatten the balls – you can give it any shape you want - and fry them till they are cooked. Then place them aside. Now for the Gravy. Grind the onion, garlic, and green chillies and a pinch of salt into a fine paste. Take a kadai pour a little oil into it, pour the paste and cook it completely. Once done, add Paste 1 to this mixture, vigorously mix both so that it becomes one cohesive mixture. When done, pour this mixture into a serving dish. Place the shaped koftas into the gravy and decorate it the way you want it. In the present case it has been decorated as a smiling mouth. For the decoration, wee bits of pepper, grated carrot, anar Dana and coriander have been used.
