Date Biscuit Roll Ingredients (Serves 4) 125 gm butter 200 gm crumbled biscuits 75 gm grated jaggery pared rind 2 oranges ½ tsp cinnamon powder 50 gm melted chocolate 250 gm chopped seeded dates 4 scoops ice cream 1 beaten egg mint sprigs and orange segments Method Melt butter in a pan. Stir in sugar. Add dates. Cook for five minutes stirring continuously. Remove from flame and beat in egg, followed by biscuits Shape into a roll Wrap in foil and chill overnight. Blanch orange rind in boiling water for fifteen seconds. Dry and dip in melted chocolate. Allow it to set. Slice date roll and serve with ice cream, chocolate strips, mint sprigs and orange segments. 69. Rich Chocolate Cake Ingredients 2 cups maida 1 ¾ cup castor or powdered sugar ⅔ cup oil, butter or margarine ⅔ cocoa powder 1 cup water 1 tsp vanilla essence 1 ½ tsp baking soda ½ tsp baking powder 3 eggs ¼ tsp salt Method Take two 9” (23 cm) round OR 8” (20 cm) square cake tins. Line the base of the tins with butter paper, or grease the bases and dust either with maida or sugar till well coated. Sift the flour, cocoa, baking soda and powder, and transfer into a mixing bowl.
